Celebes Kalossi (Sulawesi) Known for its lively, syrupy flavor and spicy aroma with medium body. Lighter in body than Sumatran, it's considered the "champagne" of Sumatra Boengie. It is harvested yearly from very old trees in the Toraja region. Hard enough to be roasted to high temperatures but can mask the more subtle tastes.
